Bush Tomato Napoli

Ingredients

1 small Onion
2-3 cloves Garlic
¼ cup Olive Oil
1 dsp Tomato Paste
1 small Carrot
750g Ripe Cooking Tomatoes (or tinned)
250 ml Tomato Juice
2 ½dsp/ 40g Ground Bush Tomato
10 leaves Basil
1 dsp Castor Sugar
½ tsp Salt
1/3 tsp Pepper Leaf ground

Method

  1. 1. Grate the Carrot, chop the Onions, Garlic and Basil.
  2. Simmer the Onion and Garlic in the Oil for 5 – 10 minutes until they JUST begin to colour.
  3. Add all the remaining ingredients (Tomatoes diced 1cm).
  4. Simmer slowly for 45 minutes.

Makes about 1 lt.
Serve with freshly cooked spaghetti and generous grated parmesan
