Wattleseed Damper
Ingredients
125g roast ground wattle seed
1.5 lt water
4.8 kg self raising flour
1.5 lt Beer
100g sugar
100g salt
Method
Pour boiling water over wattle seed, allow to cool to luke warm
Sieve flour, sugar & salt. Add all the ingredients into a large mixing bowl. Mix on low speed for 5-8 mins. to form a smooth dough. Allow to rest covered for 10 mins.
Form into 60g dinner rolls or baguettes.
Bake @ 180o C for 20 mins.
Yield : Approx 80 dinner rolls
